World Bread Day

Walnut Bread from Dough by Richard Bertinet
  • 400g Strong White Flour
  • 100g Dark Rye Flour
  • 10g (Fresh) Yeast - I used dried
  • 10g Salt
  • 350g Water - weighing is more accurate
  • 200g shelled and crushed walnuts
Simplicity itself - mix the two flours and add/rub in the yeast. Add the salt and water and pound/pummel/slap or however you like to make your dough until smooth and elastic. Add walnuts at the end. Shape into a ball and leave under a tea-towel for an hour. I have found the best place for the dough to rise is on top of my CRT monitor (I have a dual screen setup, one being a flat-screen).

When risen divide into two, make each into a ball and let rest for five minutes. Make a big hole in the middle and leave to prove for another hour until doubled in size. Preheat oven to 240C. Mist inside with a spray, reduce heat to 220C and bake loaves for 5 minutes. Reduce heat to 200C. Should be ready in 15 minutes. Remove and cool. No nibbling while still hot!

This bread looks wonderful, can not wait to make it. I live in Romania and the walnuts are ready now ,they grow every where here on the road sides , so you just help yourself.

Hello---I've been looking for a very dark(maybe rye) bread with walnuts. Came across yours---Looks very enticing---only thing is I'm in the USA and am awful in math---so will have to take this recipe to the Extension office to see if they can transpose the numbers for me....So, if you can come up with a dark bread with walnuts, please send it to me.
