World Bread Day
World Bread Day - a blog event organised by Kochtopf, a German Blog in support of The International Union of Bakers and Bakers-Confectioners declaring the 16th of October as World Bread Day. Walnut Bread, made following the recipe in Dough by Richard Bertinet being my entry...Walnut Bread from Dough by Richard Bertinet

- 400g Strong White Flour
- 100g Dark Rye Flour
- 10g (Fresh) Yeast - I used dried
- 10g Salt
- 350g Water - weighing is more accurate
- 200g shelled and crushed walnuts
When risen divide into two, make each into a ball and let rest for five minutes. Make a big hole in the middle and leave to prove for another hour until doubled in size. Preheat oven to 240C. Mist inside with a spray, reduce heat to 220C and bake loaves for 5 minutes. Reduce heat to 200C. Should be ready in 15 minutes. Remove and cool. No nibbling while still hot!

Unfortunately I missed (or forgot about) World Bread Day, despite having big plans for a post.

This bread looks wonderful, can not wait to make it. I live in Romania and the walnuts are ready now ,they grow every where here on the road sides , so you just help yourself.

Hello---I've been looking for a very dark(maybe rye) bread with walnuts. Came across yours---Looks very enticing---only thing is I'm in the USA and am awful in math---so will have to take this recipe to the Extension office to see if they can transpose the numbers for me....So, if you can come up with a dark bread with walnuts, please send it to me.
