Not an original idea I am sure. Layers of melted-butter stroked filo pastry stuffed into a muffin tin. Think I went for three sheets in the end. A little spoonful of caramelised onions goes in next. These came from a jar (A more generous helping of sliced leeks (pre-cook to an edible softness in a little butter) followed by a little left over taleggio cheese layered on top. Pour in a mix of an egg (free range 'cause you don't have another choice) whisked into double cream. Bake for 20 minutes or so at 190C or the equivalent.

One should do as a starter or two for a main course when partnered with a simple green salad.

A wine? Rather chuffed with partnering with a New Zealand Sauvingon Blanc - specifically the 2009 Kimbao pinched from the latest Jamie Oliver Mixed Case sent out last week by Naked Wines.
