Rice and Noodles called them Mini Chocolate Cakes but taking the mix and tipping a few spoonfuls into the muffin tins produces these amazingly tasty cake-muffin hybrids. Keeping the cooking time to the 10-12 minutes specified, rather than increasing it by another 5 or 8 minutes, results in the wonderful product pictured. Pictured poorly I am afraid as the cake-styling goddess was absent today.
Where the slightly under-cooked mix remains becomes, on cooling, a glorious, gooey interior that contrasts superbly with the crispness of the exterior and the soft, fluffiness of the muffin itself. But it is the spices, cinnamon and clove, that adds an extra edge and complexity of flavour.

I guess the hole could be filled with mascarpone or cream or a little spiced pear perhaps.
What went gloriously really well with these was a glass of sweet Madeira.
