Ever since receiving the Euro Blogging By Mail package from Andreea I have had a craving to make a cheesecake. There was this packet of biscuits you see that were just crying out to end their life as a crunchy base for a cheesecake.

My periodic delve into Slater's Diaries found a recipe for a Strawberry Mascarpone Tart which was seemed easier, quicker and lighter than constructing a full-on cheesecake. It would also use up a punnet of local strawberries (small but very tasty), a last egg from the neighbouring farms half dozen (can't get more local than that!) and would slate my sweet-tooth craving.
Strawberry Mascarpone Tart
Nigel Slater's Strawberry Mascarpone Tart
  • 1 large egg
  • 1 tablespoon caster sugar
  • 250g mascarpone cheese
  • 2 drops vanilla extract
  • 350g strawberries
  • 75g butter
  • 250g biscuits
Melt butter and mix with crushed biscuits. Line a loose-bottomed cake tin. Chill until set.

Separate the egg. Mix the yolk with the sugar and then beat in the mascarpone. Add the vanilla extract. Beat the egg white until stiff and fold into the mascarpone.

Spoon mix over the biscuit crust and top with the strawberries, thinly sliced.

Looks delicious - I need something yummy to bring to potluck coming up, and that looks like it would fit the bill. Especially since stawberries are currently in abundance at the farmers market.

I've been referring to The Kitchen Diaries since I bought it - what a lovely book. And gorgeous tart too, by the way!

That looks absolutely scrummy, Andrew. I don't usually make puds but this one just has to be made at the cottage this weekend...
