For some reason - maybe the wine - the image of these pancakes is not terribly good. I've played with colour correction, levels and wotnot but it still fails. What has worked though is the taste of these pancakes - stuffed inside these crispy wonders are a heart-stopping but taste-tantalising mass of cream whipped to stiffness with icing sugar, brandy and crushed walnuts folded in on serving. Over the top of this is a homemade caramel sauce. Full details on slashfood.

Your description sounds delicious, Andrew - a pity the picture didn't live up to your expectations. I'm making Shrove Tuesday buns at the moment, as that's what all Nordic people eat today (though to be a diligent British resident, I made pancakes last weekend:)
