Fruit Skewers – simply pineapple chunks, melon and cherries drenched in a honey/sugar/mint/lime glaze and griddled. I’m guessing you could grill too. The finely chopped mint takes these to ‘another level’ to use a cliché. Recipe from On A Stick by Matt Armendariz.

Mixed Fruit Skewer

While the original Fruit Skewers recipe advocated the use of pineapple, watermelon and cantaloupe melon I exchanged the watermelon for cherries, having a punnet that needed using up. While the skewers were on the griddle I basted them with the syrup. Ensure there is a little mint on each piece – delicious.

The syrup is a mix of sugar (1/2 cup), honey (1/4 cup), mint and lime zest boiled. Sublime.
