Nigel Slater hits the spot once again. While not strictly following the diaries day by day, the April 16th recipe, Thyme and Feta Lamb, appealed. Fresh with a spring feeling but primarily as it appears quick and easy to prepare. Lamb chops marinaded for an hour or so in lemon juice, garlic, black pepper, olive oil and chopped thyme. Grilled until the fat is crisp and golden and served over crumbled feta cheese enlivened with chopped mint, more thyme and a glug of olive oil.
