As my forthcoming weeks food diary will display, my veg intake certainly doesn't reach the giddy heights of the five-a-day recommendation. Some sort of rectification was required and this simple dish from my pal Pille's Nami-Nami blog sounded interesting; not least for the Estonian(?) Swedish(?) name - Hallumi-juustuga täidetud paprikad.

Served on a large bed pile of mixed salad leaves I just wish I had roasted two peppers each, rather than just the one! Not only because I'm greedy but also because they tasted great. Oh, and just ignore the fact that my halloumi 'cubes' melted in the pan; 'tis the taste that counts after-all.
This dish was served with a Southern French Viognier; the cumin really bringing out the spice characters in the wine.
The photographs are a little lacking. Having just thrown the Halloumi in the frying pan I rushed about getting a spot light set up, knives on the table, place mats - the cheese afterall takes minutes to brown. No time to think about an arrangement, highlights reflecting off the glistening peppers or anything else 'technical'. On to the plate. On to the table. Click. Move the cutlery. Click. Eat. I hate food when it has gone cold...

Thanks for trusting my recipe, Andrew! How you managed to melt the halloumi remains a mystery to me, however:)
PS Have made this few times more, and really-really like it.. Pictures are beautiful, as always!

As you can see from the pictures the cubes have certainly taken on a more fluid shape than 'cuve' indicates! Perhaps the pan was too hot?
