Peach Cobbler  Add/Read Comments

By coincidence the recipe is the entry for the 15th July in Nigel Slater's Kitchen Diaries. He advocates the use of Peaches and Blueberries but with no blueberries to hand and even with the peaches being a little under-ripe it was a case of "let's go for it". No soured cream either, surely a substitute of Greek Yoghurt remaining from the Walnut Pasta Sauce would suffice?

And it did! Another English dessert personified; a Cobble being little more than sweetened, stewed, fruit topped with a scone like layer. Slater makes the Cobbler crust as
  • 150g plain flour
  • a pinch of slat
  • 2 teaspoons baking powder
  • 1 heaped teaspoon caster sugar
  • 80g butter
  • 142 ml soured cream
The pastry is rolled and cut or shaped into rounds and placed on top of the fruit, plus a little lemon juice and sugar. Baked for abut 25 minutes and served with ice-cream or crème fraîche.

Oh yum! I have to re-read kitchen diaries tonight. I've got plums in the fridge. I think I'll make a cobbler with them :)

Yummmmm! Too bad, Missouri has no peaches this year, thanks to three days of hard freeze just as the peach trees were mid-blossom.

That looks delicious! I reckon I'm going to try it with peaches and the last of the redcurrants from the garden. I'll let you know how I get on ...

JumScrum....barry's mum made this for us a a few weeks ago and it was soooo good, I nearly ate the whole bowl! needless to say I was feeling pretty stuffed (=ill) after but also very very satisfied :-)

Scrumptious book and scrumptious cobbler. I make a peach and raspberry cobbler, but I'll be trying blueberries next time, thanks to you. And that's quite a lovely dish in the photo. Wish I had one of those too....

Thanks everyone - such a simple but tasty dish (unless you are in Missouri) easy to adapt to whatever fruit is available.

I realise now though that I actually used nectarines rather than peaches.

Wow, this looks delicious!! and i just finished the last batch of peaches eating them alone or as fruit salad!! wish i had seen this earlier:)

Those peaches are just downright sexy! This looks delicious!
