Aidan Brooks, aka Trig, runs a blog covering his experiences as a Trainee Chef; hence the name of the blog Aidan Brooks Trainee Chef.

His goals, he writes, are "after graduation is to travel globally, working with chefs in a variety of gastronomic cultures to gain knowledge and experience. When I'm ready, I want to open a restaurant and do my bit to help Britain establish itself at the forefront of world cuisine. I'd also like to write and to broadcast on culinary matters."

Lets hope he keeps the blog going while doing all of this! At the moment he is in Hackney, London but it's early days... duly added to the Brit Blog Foodie Hall of Fame, until such time as he departs these shores.

yay, finally you found him! i have been a fan of trig for a few weeks now and i was wondering when you where including him in your uk-foodblog roundup.

P.S. Re. your latest posting, I was always taught that you start with onion and garlic and then wonder what you are going to cook.
