I'm not convinced that all the ingredients for the marinade are worthwhile. The saffron imparted little it seemed, unless I just used some poor quality strands. The recipe for Paprika Pork Skewers with Broad Bean Salad appears in the June issue of Delicious (more details on Paper Palate). They suggest a garnish of mint, but I find it such a powerfully flavoured herb that I wish I hadn't bothered. Mint also gives me indigestion, I have since discovered.
I also took the liberty of mixing the broad beans with noodles; I was hungry! And yes I know I'm supposed to pod the beans but really, life is too bloody short. The purple thing in the bottom photo, for those with an inquiring mind, is my olive oil pot. Nice ain't it. It's French.

Like you I'm not much of a fan of mint, but found it worked for this recipe.
We used butter beans along with the broad beans which was very nice.
