Blimey. These are very, very garlicky. And, depending on how much chilli you include also rather hot! They are also really delicious. This Garlic Lamb Skewers Recipe is simplicity in itself to prepare. You will need plenty of garlic and some decent Spanish red wine to accompany. This recipe is taken from
The Little Tapas Book.
Ingredients
- One lamb steak per person
- 1 garlic bulb
- 1 red chilli chopped finely
- 2 crushed garlic cloves
- Olive oil.
Instructions
- Combine the chilli, crushed garlic and a generous pour of olive oil. Heat a griddle pan and brush with a little of the chilli oil.
- Cut the lamb into bit sized pieces. Thread three pieces of the meat onto a skewer alternating with garlic (size depends on how much you can handle!). Cook on the griddle for up to five minutes, brushing with the chilli oil.

This is the third in a series of five tapas dishes. For a wine match a glass of Freixenet Elyssia Pinot Noir Rosé Cava would work well, although you might perfer a deep Spanish red such as the Valdubon Reserva from Ribera del Duero.
