Cranberry and Almond Flapjack  Add/Read Comments

Ignoring the pat of butter and the large amount of sugar that goes into flapjack I was hoping that the oats and fruit, in this case cranberries, would be a healthy addition to this weeks diet.

Not happy with this recipe though (from November issue of Fresh). The result, although tasty, is far too crumbly. What I expect in decent flapjack is something crunchy on the outside but softer and chewy in the center. Any recommendations?

Flapjack

Cranberry and Almond Flapjacks from Fresh magazine
  • 100g almonds
  • 100g dried cranberries
  • 225g porridge oats
  • 200g cubed butter
  • 200g light muscovado sugar
Oven to 170C/325F mix all dry ingredients and add to a mix of the butter and sugar melted together. Spoon into a 20cm square tin. Bake for 20-30 minutes.

needs golden syrup!
I'd try 140 grams sugar and 60 grams golden syrup and press the mixture down well in the tin.

Thanks Bron, as soon as I can get some more cranberries I'll give your suggestion a try.

There's a flapjack recipe from Sue Lawrence's Book of Baking that I've been meaning to try. The recipe only has three ingredients ..
200g butter : 450g porridge oats : 6 Tablespoons Golden Syrup. There are also a couple of variations such as coconut flapjacks, apricot and honey, and banana flapjacks, which sound really yummy.
