Cranberry and Almond Flapjack Add/Read Comments

Ignoring the pat of butter and the large amount of sugar that goes into flapjack I was hoping that the oats and fruit, in this case cranberries, would be a healthy addition to this weeks diet.

Not happy with this recipe though (from November issue of Fresh). The result, although tasty, is far too crumbly. What I expect in decent flapjack is something crunchy on the outside but softer and chewy in the center. Any recommendations?
- 100g almonds
- 100g dried cranberries
- 225g porridge oats
- 200g cubed butter
- 200g light muscovado sugar

needs golden syrup!
I'd try 140 grams sugar and 60 grams golden syrup and press the mixture down well in the tin.

There's a flapjack recipe from Sue Lawrence's Book of Baking that I've been meaning to try. The recipe only has three ingredients ..
200g butter : 450g porridge oats : 6 Tablespoons Golden Syrup. There are also a couple of variations such as coconut flapjacks, apricot and honey, and banana flapjacks, which sound really yummy.
