Sorry 'bout the poor image. Blogging after a few jars... prob not a good idea. But I MUST get a cheese sandwich post up. Toying with the idea of a Cheddar and Vegimite toastie but settled on something more sophisticated - fried haloumi layered with spinach/watercress/rocket leaves in a whole wheat pitta, doused with a lemon rind and olive oil dressing. About the best late night snack, after a session at the Queens Head, you could want; apart from chips. Obviously.

I used halloumi in my sandwich, too, only made the mistake of putting it on too-flavorful sourdough bread. We usually eat our fried halloumi by itself (with other middle eastern food, that is) but next time I'm going to try layering it with greens. Thanks for the inspiration!
