Asparagus Puff Pastry Tart.  Add/Read Comments

I forget where the recipe comes from and I have no idea of the exact proportions of parmesan to mascarpone either. A simple layer of puff pastry topped with a mix of the two cheeses (more mascarpone than parmesan) and par-boiled asparagus. Thrown in the oven for 15 minutes or so and topped with parmesan shavings and some parma ham.

Serve with a decent Austrian Grüner Veltliner, something white from Alsace or a Sauvignon Blanc to really emphasise the crispness of the asparagus.

I think that looks like about the best thing EVER. Wow, that parma ham looks good.

Me thinks a little exaggeration L! But the ego boost is greatly received all the same.

Andrew,

That's absolutely gorgeous!

I would tuck into this one happily, too!
(PS you'd be proud of me, Andrew. I was in Paris for the weekend and drank some very nice wine, carefully and well chosen to match the food:)

Hi Pille - I am indeed impressed!

This does look just wonderfully delicious.

My mom has been making a similar recipe for years - she also cannot remember where she got it. It isn't quite as elegant as yours, but from the bottom up: puff pastry, thick slice of ham, several asparagus stalks (cooked to taste), slice of Lorraine swiss cheese. Spoon hollandaise sacue over and then pop in broiler to brown a little.

I have to agree with L. Absolutely brilliant!

So much so that I had to write something about it. In Portuguese, I'm afraid. The link is http://esoumdiario.blogspot.com/2008/08/queijos-e-vinhos.html#links

Thanks a lot for the always pleasant and intelligent reading.

big hug from Southern Brazil (near our wine country).
